Buttermilk Fried Crappie Recipe submitted by Gusta Tice, El Dorado, Ark.
12 to 15 crappie fillets
cooking oil
¼ cup cornmeal
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon cayenne pepper
2 ½ cups buttermilk
Soak fillets in buttermilk for 1 hour, then drain. Mix flour, salt, cornmeal, black pepper and cayenne pepper. Dip fillets in dry mixture and fry in cooking oil until golden brown.
Crappie With Lemon Butter Sauce Recipe submitted by Joseph Cash, Highland, Ind.
12 crappie fillets
1 cup flour
1 teaspoon salt
1 teaspoon pepper
3 Tablespoons oil
Mix flour with salt and pepper. Dust fillets with this mixture. Sauté fillets in oil for 4 minutes on each side. Serve with sauce.
Lemon Butter Sauce
½ cup butter
juice from half lemon
1 teaspoon prepared mustard
1 teaspoon dried parsley
1 Tablespoon favorite white wine
salt and pepper, to taste
Melt the butter in small saucepan and add remaining ingredients stirring for a few minutes but don’t boil. When sewing the fish on a plate spoon some of the sauce over the fish.
Baked Crappie Delight Recipe submitted by Frank Hopkins, Waxahachie, Texas
12 crappie fillets
½ cup beer
2 cups cornmeal
2 eggs
dash of garlic powder
dash of lemon pepper
dash of lime juice
dash of sea salt
2 to 8 drops of Tabasco Sauce and/or Mrs. Dash Extra Spicy Seasoning Blend virgin olive oil
Brush virgin olive oil onto fillets. Combine other ingredients and coat the fillets with the mixture. Bake at 350 degrees for 15 minutes.
