CRAPPIE RECIPES
Sun-Dried Encrusted Crappie w/ Avocado Tartar Sauce
Recipe submitted by Jonny Gettle, Hayward, Wi.

Sunny Crappie Heaven
½ cup olive oil
2 cups dry bread crumbs, unseasoned
1 ½ cups oil-packed sun-dried tomatoes
4 large garlic cloves
1 teaspoon thyme
pinch of cayenne pepper, black pepper, kosher salt

Mix the above ingredients in food processor and slowly add olive oil until breading is moist. Pre-heat oven to 350 degrees. Place fillets skin-side down after pouring a lemon white wine combination just enough to cover the pan. Pat fillets with mixture and bake for 15 minutes or until golden (bake time will depend on the size of the crappie).

Avocado Tartar Sauce
1 cup mayonnaise
2 avocado, chopped
6 sweet pickles, gherkins
1 tablespoon parsley
1 ½ tablespoons chives
1 ½ teaspoons thyme
½ teaspoon sugar
pinch of cayenne, white pepper, kosher salt
touch of lemon juice

Puree in food processor until smooth.
