CRAPPIE RECIPES Deep Fried Crappie Recipe submitted by Ed and Thelma Greene, Coweta, Okla.
Crappie fillets
Salt and pepper, to taste
Cayenne pepper, to taste
Cornmeal
Cooking oil
Heat cooking oil to 350 degrees. Pay crappie dry with paper towel. Mix cornmeal, salt, pepper and cayenne pepper, together in plastic bag. Add crappie fillets one at a time to this mixture, drop into hot grease and cook until golden brown. Use lots of cayenne pepper if you like your meals spicy.
